This is an unusual and absorbing cookbook devoted to crustaceans, molluscs and fish - ingredients that are healthy, easily prepared and ecologically correct. Among the recipes are a number of classics from the upper end of the crustacean cuisine, but great importance is attached to simplicity of preparation. Also included are a variety of other tempting fish dishes, made from fresh tuna, red snapper, 'klippfisk' (split, dried cod) and carp. The book brims over with useful hints on what to buy, storage, preparation, garnishes and so on, and the authors spice the whole with their personal and professional observations.
